Spinach, Mushroom & Garlic Pizza and...Solitaire


Gosh, I guess that I've been on a bit of a pizza kick lately. I didn't realize it until now.

It must be the attraction of simple, summer food. Food that can be made at home or ordered from a restaurant with success.

For this recipe, I used the basic pizza dough recipe that I used in my focaccia recipe.

After that, I simply topped with a little store-bought pizza sauce, some Italian cheese blend and desired toppings. I used a frozen spinach for the right texture and lots of fresh garlic and thinly sliced mushrooms.

My son won his first games of solitaire this last week. He just learned how to play and he played nonstop until he won. As promised (he insisted this go up on the blog!), here is a picture of his winning piles:

That pizza looks delicious. Every time I've tried to make my own dough from scratch, I fail miserably. It never seems to rise properly. Maybe I'll try yours.

Hi Caryl, thanks, the pizza was great! And if you lived closer, I'd invite you over (it's pretty quiet in a new state with no friends!). The bed is good, but now I think I need a new pillow! The last one just isn't cutting it and I'm thinking about a memory foam type.

Hi Kristi, you should try that dough. It rose very well. I had a hard time finding someplace warm enough in my apartment, so I finally just took the bowl outside and put it in my car for a while. That did the trick! Also, be sure that your yeast isn't too old. I think that they come with expiration dates...

Congrats to your son on winning! And to you for getting yourself a fancy bed for a decent price - yay! It looks truly wonderful...makes me want to lay down and take a nap in all this heat! This pizza sounds delicious - garlic is always a bonus on a pizza! How's the weather there in Boulder?

Hi Michelle, The weather here has been warm (but apparently not as warm as So Cal has been since we left). Yesterday it was in the nineties and today it is a bit cooler. We went down to Boulder Creek and played in the water. That was great. Lots of folks floating on inner tubes there the last few weeks! My son was definitely thrilled to win at solitaire, but I think he was happier at beating me and my hubby at Rummy! The new bed is great, but I'm still getting used to it. They say it takes a few weeks for a new bed to get broken in, so it should get better and better!
